  3. I am so sorry to hear of Dale’s passing. I hope he knew how special he was to so many of us who were fans of Fleur de Sel. I have been going to Fleur de Sel since it opened and he was there from the start. I was the one who was known for harassing him by always asking for pomme frites until they finally bought a deep fryer!

He always made my husband and I feel not only welcome, but special and like we were important guests. He was very funny and authentic; quirky for sure and in only the best way. He knew just how to make an evening special. When we went to Fleur de Sel, we always knew we were in for a NIGHT OUT, not just dinner, and it was mostly because of Dale. Once in awhile, he would see that we and the others at the restaurant were having a particularly fun time, and he would dim the lights, light up the disco ball and turn on the music from his extensive playlist and we would all end up dancing all night. He knew just what to do.

I wish I knew him better, but I am happy I got to know him at all, if only through the restaurant. He was a very special person. A very bright light. I am feeling his loss deeply and I hardly knew him. I can only imagine what you all must be going through. I just want you to know that he impacted me and my life and the world is lesser for the loss of him.

  4. Dale was an institution. His was a friendly face, a profoundly genuine character, and a familial presence to all those who found some measure of comfort and refuge in our unique little culinary corner. Our small crew worked, struggled, succeeded, and felt like a family, with all its raw and beautiful eccentricities laid bare. And we loved each other. Service, in the truest and best tradition, was his gift to us all. That you left us will leave a scar, Dale -but I’m indebted to you for forever enriching my life. Rest easy brother. xo.

  7. Dale and I were very close when we attended the University of Saskatchewan in the early ’90s. He was a dear, attentive friend and we went through some major growing pains together. I loved his joie de vivre, his wit and his generosity. We drank way too much coffee together, listened to great music and sometimes stayed up all night talking.
When I moved to Calgary, we reunited and spent time together. I gave him a piece of art called Adam and Steve I bought in Winnipeg because it seemed so Dale. He was a true original. The world has lost a bright light. My deepest condolences to his husband, his family and his friends.

Dale had the unique combination of sincere professionalism and madcap fun. There’s no one I can think of in the local service industry that matched his abilities to create experiences for his customers. He was a huge part of the Fleur de Sel package, his warm smile a welcoming moment, his deft movements between the tables a figure of grace and his swift hands with a glass of pineau as elegant as a swan. There will be no other like him.

  19. I am so very sorry to hear of your loss. I knew Dale from frequenting Fleur de Sel. It is my favourite restaurant in Calgary because of the great people they have working there, in particular, Dale. He was such a delight, he was always so kind and welcoming, so very different from your normal server or host. Immediately, upon meeting Dale, he made you feel like a long lost friend or family member. He really made a meal out, feel like a meal at home. His never ending smiles and laughter were contagious. I will really miss his effervescence and joie de vivre.

    In loving memory,

  20. One of a kind. Dale was a wonderful guy, who was single-handedly responsible for some of the most memorable evenings I – and many friends and family – have ever had. I so looked forward to seeing him every time we attended Fleur de Sel. Each evening was totally different from the last, but his wonderful sense of humor, kindness, and wit was always spot on.

He will be truly missed, and we are all passing our absolute best through the ether to his coworkers, friends and family.

    Deepest condolences.

  21. Good Afternoon,
My condolences. I met Dale some 20 odd years ago as we floated through the restaurant scene together and he, being the sweetheart he is, let me mistakenly call him Kris for approximately half of those years. I have always lived in the Mission area and is not uncommon for me to walk by Fleur de Sel on a daily basis and actually looked in to give him a wave last night and found out this morning that he is gone now…I believe this is not the end for us as I believe we are energy and continue to play our part in this world when our physical form is no longer..I will continue to my walks down 4th St and know I will feel “Kris'”presence and will continue to wave to show that him that he is never forgotten but merely missed until I get to see him in the next phase. Thank you for sharing him with us and will miss his kind and gentle nature.

  22. We are so sorry that Dale is gone. He made every occasion shine and we looked forward to seeing him, his sense of humour and how he made everybody feel so comfortable. Every one of our special occasions was at Fleur de Sel, generally with Dale presiding over them- not to mention the evenings drinking wine at the bar.
Dale’s panache, wit and kindness were unfailing and we will miss him terribly.

Some people are exceptional at what they do or simply exceptional. Dale was both, bringing joy to many and many to joy. From our regular Friday night take out of steak aux poivre — frites for one, double vegetable for the other — to the lazy girls lunches that blissfully led to late afternoon conclusions, Dale was the magical maestro. It was always a welcoming, brilliantly conducted performance, delivered with wit, skill, a radiant smile, and a dashing full head of hair. Over the years we together celebrated many landmark family occasions at Fleur de Sel. To many it was as if Dale was family, and he was to us. Our out of town friends only wanted to go one place when they came to Calgary — Fleur de Sel and Dale .
To his husband and family, our most sincere condolences and warmest thoughts. To Dan and Patrice, thank you for the years with Dale and the superb times we have enjoyed.
“One cannot think well, love well, sleep well, if one has not dined well.” -Virginia Woolf once said.

Thanks to Dale we have always done all three after a night (or lunch) at Fleur de Sel. He was an institution. And he will be dearly missed.

On the passing of “Monsieur Dale”, our sincerest condolences.
Definitely had the looks of a bon-vivant and suspected he had many friends and acquaintances; confirmed by the many that have contributed their condolences in this his obituary.
Still we can only fondly remember him getting ready for his shift with this hurried look, unkempt hair, changing into his white starched shirt, multi- tasking, waiting to greet Fleur de Sel’s many regulars. Customers that not only showed up for the great food, but to listen and observe the many antics of such a unique gentleman. We Italians simply refer to as”simpatico”.
